[Wing] fuselage jig

Hey, isn't it great to get 'the final word' from someone whose built a few
RV's on how to do something!
,...but being a 'not-yet-builder', I'm confused!!
If everything is pre-punched and precision tooled to millionths of an inch,
why do I constantly hear the word 'jig' .
I understand there are lots of jigs available to rent, borrow or buy, but
are they absolutely necessary to get a straight airframe? What if you get a
quick-build kit?...does this really ensure correct alignment of the wing &
fuselage?
